Dear legend,

Mole is a Mexican sauce blending over 20 ingredients which create very complex flavors that satisfy most palettes.

Mole is not just a term to describe a type of sauce. It encompasses a variety of sauces with unique variations in ingredients which lead to original flavors, textures, and colors. These unique colors can vary from green, to red, to brown, and to almost black.

Often eaten during the holidays and other celebrations, mole is steeped in family and tradition. It used to be common for women to dry, toast, and grind many of the ingredients by hand. The ingredients, which are still used today, include a unique mixture of dry chilies, spices, dried fruits, nuts, seeds, and even chocolate. Laura Ramírez, owner of Moles Galdi, grew up around these flavors.

Ramirez' mother, Galdina García, prepared and sold dishes with mole, but when she was unable to continue with the family business, Ramírez established Moles Galdi in her honor.

Mole is a sauce of patience, a sauce of details.

Each batch of mole is crafted carefully. Ramírez pays close attention to the quality, preparation, and ratios of the ingredients. It is no easy task considering the many ingredients needed to create a wonderfully robust mixture. Despite all the needed hard work, Ramírez enjoys the process. Many of Ramirez' family members share her passion for mole. They help her craft and innovate Moles Galdi's unique flavors.

Taking no shortcuts, they stay true to the bold, complex flavors steeped in Mexican tradition.

Mole, as opposed to other types of sauces, is not eaten from the bottle.

The mole paste, found in bottles or sold by weight in Mexican markets, needs to be mixed with hot broth then poured unto a hot pan with some hot oil and simmered until it thickens. It is then poured unto beef, chicken, turkey, or used in enchiladas.
